You already know some of our favorite wines from Spain, which are the Vinos de Jerez, but there in the beautiful town of Cádiz, there is another product that we fall in love with, and it is the Sherry vinager.

Vinegar, a word that comes from the French "vin aigre" (sour wine), is a product obtained through the action of acetic acid bacteria on a hydroalcoholic solution. Although vinegar can be produced from any food that ferments alcohol (apples, beets, rice), today we present the one made exclusively from Sherry wines.

Like the Sherry Wines, the Sherry Vinegar is aged following the traditional criaderas and solera system, a genuine and prolonged aging in wood that sometimes exceeds 10 or 20 years and which explains the richness and high concentration that characterize to Sherry Vinegar.

The vinegar for bottling is extracted exclusively from the row of barrels located at ground level, called solera, which contains the oldest vinegars.

The amount extracted from the solera, always a small part, is replaced by slightly younger vinegars from the row of butts immediately above: the first criadera.

This same operation is repeated with the vinegar contained in the third row of boots, the second criadera, and so on.
