Chestnut honey is a mono-floral honey with a rather dark amber colour. It has a floral aroma, although a herbaceous aroma with a marked component of dry wood predominates.

It has a sweet taste, although there are salty or even bitter notes. Its flavour is reminiscent of the forest, as it is very reminiscent of wood or resin.

USE TIPS:

• Thanks to its salty notes and intense flavour, it is ideal for combining and adding to hot dishes that include meat or fish.

• It is ideal for use in cooking, in different cooking methods, to enhance preparations and give them added value with its aromas.

• It is perfect to use especially in savory recipes as it balances them.

APPLICATIONS:

• Add to sauces to accompany or serve fish or meat. For example, in honey and mustard sauces, soy-based sauces, lemon-based sauces to accompany white fish, red wine and honey reductions, etc.

• Add a few spoonfuls to the stir-fry of meat and mushroom rice.

• Use to preserve game meats in particular. Macerate the product in honey for hours and then preserve it in its own fat. For example, make duck confit.

• Marinating meat or fish with honey (covering it with honey and spices, for example) and then cooking it accordingly (grilling, slow-cooking, oven-roasting, etc.). Marinating fish such as tuna, cod, turbot, etc., and game such as rabbit or duck.

• Dissolve a few spoonfuls in the sauce of beef or pork stews.

• Top with warm toasts that include, for example, goat cheese, sobrasada, caramelized onion, tuna, Roquefort or Gorgonzola cheese,

Information about Alemany

FIVE GENERATIONS OF HONEY AND NOUGAT

In the town of Os de Balaguer (La Noguera), under the gaze of Montsec and its exceptional sky, Torrons and Mel Alemany has built a universe of the sweet. For five generations, the Alemany family has been making artisan nougat and select the miel of the best beekeepers.

The history of Turrones y Miel Alemany begins at the end of the XNUMXth century, when Mrs. Mundeta made a caramel with honey and nuts from the area. Since Montsec is a rough and difficult terrain for cultivation, this activity was a good alternative.

The differential feature of Alemany nougat It is due to a XNUMXth century recipe that gives the pasta a characteristic white. A slow cooker, local nuts and a miel of highly selected rosemary are part of a secret that gives a particular flavor to nougat.

Alemany has specialized in monofloral honeys, which are collected from beekeepers across the country. Innovation in Alemany is provided by the concept of miel with added value, in its line of gourmet honey.

Alemany nougat and honey have been recognized with the Great Taste Awards on different occasions, an award considered the Oscar of the world of delicatessen food.
