Description
Señorío de Montanera's organic folded loin is an exceptional cured meat made from 100% Iberian pigs fed on acorns and raised organically. This specialty is based on a traditional recipe from southern Extremadura, recovered from the region's traditional slaughters.
The preparation of the folded loin begins with trimming the external fat off the loin. It is made from the whole piece of 100% organic acorn-fed Iberian pork loin, which is then seasoned with salt and organic garlic. Before being stuffed, it is coated with 100% Iberian acorn-fed white lard and folded in half, giving it its characteristic shape. It is then stuffed into a natural casing and tied at six points with strings, which play an essential role in its maturation.
Its curing process takes longer and takes place at a lower temperature to achieve the ideal ripeness without the addition of preservatives or artificial additives. The expert hands of a Master Charcuterie Chef frequently monitor the condition of the pieces and tie their strings manually.
This production process gives it exceptional juiciness and flavor, with a texture that melts in your mouth. Señorío de Montanera's organic folded loin has been internationally recognized for its quality, earning the highest score at the Great Taste Awards.
To fully enjoy its organoleptic qualities, it is recommended to consume it at a temperature between 18 and 24 ºC.

Conditions of conservation:
Conditions of use Inedible casing, remove before eating. Open the vacuum pack 15 minutes in advance. If you do not consume the whole piece, it is recommended to store it in the refrigerator (below 7ºC) inside the bag itself. Discard the first slice when eating again. The optimal temperature for consumption should be between 18 and 24ºC.
