Pairing Made in Spain Gourmet
For BEHER's Cular Chorizo
Speaking of Iberian cular chorizo BEHER is not just another cured meat. It's about the balance between marbled fat, quality paprika, slow curing, and aromatic depth. It's elegant intensity, not aggressive. And the pairing should respect that.
At Made in Spain Gourmet, we don't believe in accompaniments that overshadow the product. We believe in enhancing it.
Red wines with structure and freshness
The paprika and fat of Iberian pork need acidity to cleanse and tannin to accompany it.
- Ribera del Duero crianza or reserva: structure, black fruit and integrated wood that harmonizes with the power of the chorizo.
- Rioja reserve: more elegant, with spicy notes that converse with the paprika.
- Mencía del Bierzo: if we are looking for freshness and a more Atlantic profile.
The key is not extreme power, but balance.
Brut nature sparkling wines (the surprise)
Un Cava brut nature It works exceptionally well.
The bubbles cleanse the fat, the acidity balances it, and the whole becomes longer and more elegant on the palate.
It's a less obvious pairing, but tremendously effective.
Toasted craft beers
A type of beer amber ale The toasted version adds malty notes that complement the curing without overpowering it. Ideal for a more casual yet equally gastronomic approach.
Cheeses to pair (intelligently)
- Aged sheep's milk cheese (balance and firm texture)
- Aged Manchego cheese if we're looking for intensity.
- Avoid very dominant blue cheeses that mask the profile of the chorizo.
The Mediterranean detail
A good rustic bread, a subtle drizzle of early harvest extra virgin olive oil, and mild olives. Nothing more. There's no need to complicate things when the product is honest.

When it comes to Iberian shoulders and hams, which come from animals that comply with the regulations regarding Iberian pigs, there are only 4 in all the world.
- OP Guijuelo: located in Salamanca.
- OP Los Pedroches: of the province of Córdoba.
- OP Jabugo: of the Sierra de Aracena and Picos de Aroche, in Huelva.
- OP Dehesa de Extremadura: where the million hectares of pasture that we have in Extremadura are an ecological paradise for our pigs.

There's nothing better than a good chorizo sandwich with tomato and olive oil inside the bread. Its pairing with Iberian chorizo makes it unbeatable. Such textures and flavors!
