What is the Picual olive variety like?
The Picual olive is the most widely cultivated variety in Spain and one of the most recognized worldwide for its exceptional quality for the production of extra virgin olive oil. It is characterized by its oval shape and medium to large size, with a color that ranges from deep green to black when ripe.
The oil obtained from the Picual variety stands out for its high oxidative stability thanks to its high content of polyphenols and natural antioxidants. Sensorially, it offers a robust and balanced profile, with herbaceous and fruity notes reminiscent of green leaves, tomato, and banana, along with a characteristic spiciness and bitterness that lend complexity and personality to the oil.
The Picual tree is hardy and well adapted to different climates, especially hot and dry conditions, which facilitates its extensive and sustainable cultivation.
