Ecological oak is primarily used; other woods such as beech or birch are occasionally used in smaller quantities.
Pairing: Its smoky aroma is ideal for raw use of all kinds of meat and fish, salad dressings and preparation of sauces. The booklet includes proposals for pairing and international recipes, such as prawns as a Thai spicy sauce, golden in tabulee or steak with bearnaise sauce.
